Avocado love

Remember the avocado green that was so popular in the ‘70s?

Uh, yeah, OK, so that’s totally NOT the avocado  love I’m talking about! I’m talking about those silky smooth green fruits that are packed with all sorts of nutritional goodness.

Avocados are high in fat, but it’s mostly healthier monounsaturated fat. They also have lots of potassium, B vitamins, vitamin E, and vitamin K. And we couldn’t make guacamole without them!

But why stop at guacamole? Avocados are popping up in places you wouldn’t expect them. I made Giada de Laurentiis’s Choclate-Avocado Mousse on the weekend, and it was AH-MA-ZING! So creamy and chocolaty and decadent!mousse

I also whipped up a batch of avocado & oatmeal cookies last week, and I’ve got this recipe for Dark Chocolate Avocado Cookies pinned and ready to try next.

When I’m bored of eating regular salads for supper, I make a Mozzarella, Tomato, and Avocado salad similar to this one from Val So Cal.

It’s so fast and easy – cut up an avocado and some cherry tomatoes. throw in some bocconcini and a chopped green onion, add some basil & oregano (dried is fine), salt & pepper, olive oil, the juice form half a lemon or lime juice, and a splash of balsamic vinegar.

Yummy food and good for you too – what’s not to love about avocado! Oh yeah….

  1. I'm going to try that mousse recipe for sure! We eat avocado frequently. I use it in sandwiches, always put it in my rice rolls, and there is a salad I created using avocado and shrimp (with lime zest) that is so tasty and refreshing. Thanks for sharing the mousse recipe -- can hardly wait to try it!

    1. I thought I didn't like avocados too. Then I made guacamole for a party and tasted it and I was converted! You can't taste the avocado at all in the cookies and the mousse.

  4. Well, mine is the tried and true guacamole! Every Friday we have nachos with homemade guacamole, and it's seriously tough to beat. We love our Fridays and we looove our guacamole!

  7. I keep buying avocados and end up throwing them out. I know they are so health so I wanted to start eating them, but I just could never get myself to. Now that I see that chocolate mousse though... I am going to have to try that! Hopefully it will turn me into an avocado affectionado.
